“This Oloroso is surprisingly light in texture but deep in flavors of black plum, macerated strawberries and dark-roast espresso coffee. It aged in a solera for a minimum of eight years, refreshed annually by wine from three vineyards grown in albariza soil. It shows its age a bit with scents of older wood but there is a chalky acidity and a finish that leaves your mouth with a lasting perfume. It’s reminiscent of Maraschino cherries in syrup – and intriguing as a substitute for vermouth in a Manhattan.”
